I have a lot of time on my hands during maternity leave, and during this time, Pinterest has become my new BFF. Recently, I’ve been pinning a lot to my Chef Aspiration Board. You should check it out and find yummy treats and meals. Yummy treats like this sweet potato bowel I pinned from Healthy Liv. It’s yummy in your tummy! Plus, it’s simple to make too! Oh, and P enjoyed a few bites of it!
- sweet potato
- trail mix (mine had walnuts/almonds/cranberries/chickpeas)
- almond butter
- nutmeg (recipe calls for cinnamon but I didn’t have any at the time)
- Clean sweet potato and poke holes in it with a fork
- Cook sweet potato at 400 degrees for 40 minutes
- Mash the potatoes
- Add trail mix
- Drizzle honey
- Add your almond butter
P.S. I damn near burnt the house down trying to cook a potato in the microwave, and our house still has a burnt smell. Holy shit! Go away smell! WTF would I microwave one for 10 minutes? Probably because I read the instructions on the bag, and it said to microwave the entire bag (6 potatoes) for 10 minutes. Not one! Genius! Obviously I learned from that mistake and went with the oven. LOL!
